Yamamotoya Honten
Yamamotoya specializes in nikomi-udon, a simmered noodle dish. The thick udon noodles are simmered in a miso broth. The miso blend they use for the broth is like no other, and takes a whole three years to make. There are also seasonal nikomi-udon dishes, such as the oyster nikomi-udon in the winter and the mushroom nikomi-udon in the fall.
