Hishio no Sato, or “soy sauce village”, locates on the island of Shodoshima in Kagawa prefecture. This area has over 20 soy sauce and tsukudani (seaweed cooked in soy sauce) manufacturers. Shodoshima has been a significant producer of soy sauce since the late Edo period (1603 – 1867) and Meiji Period (1868 – 1912). Although today, the number of soy sauce manufacturers on the island has declined, there are still remnants of Shodoshima’s golden days of soy sauce production. Some of the soy sauce factories in the Hishio no Sato area is open for educational tours. At Marukin Soy Sauce Memorial, you can learn about the history of soy sauce making on Shodoshima. Also in the Hishio no Sato area are restaurants providing dishes using freshly made Shodoshima soy sauce. One of the most popular dishes is the Hishio-don, a rice bowl using fresh Shodoshima ingredients (including the soy sauce, of course). The ingredients in the Hishio-don rice bowls vary by restaurant. You can also try out soy sauce desserts, such as soy sauce soft serve.
