The store has been protecting the tradition of making Tsukudani, and the store is currently run by the 15th generation owner, Mr Kobayashi. They change the ingredients depending on the season, but they have over 10 different Tsukudani made from Japanese fish available every day. Their most popular Tsukudani is the Clam Tsukudani. Their original Tsukudani called ”Koumiraku” is also popular. It’s made with dried bonito, pine nuts, and sesame seeds, and you can use it as a seasoning or put it on your rice.
